Most of the local roasters purchase their coffee with low price as the most important factor. Our emphasis is on purchasing the best possible bean from the best plantations around the world, relying on the quality of the coffee as our most important factor. Additionally, most local roasters roast the coffee to the way the roaster likes it best. Why buy coffee roasted to the way someone else likes it? Buy coffee to the way YOU like it. We developed a system to identify the coffee that YOU like and are able to roast it to YOUR liking time after time. We also found out that local roasters did not sell all the coffee they roasted the same day that they roasted it. Coffee is the freshest 24 hours after it is roasted. To buy coffee several days or weeks old is fresher than what you buy at a supermarket, but stale coffee is still stale coffee. The Coffee
